Dinner. I am one happy camper.

One of the foods I have missed (desperately) is clams. I learned (after being here for 3 yrs) that they are commonly called vongole, but have never bought any at the markets because, if you know your seafood vongole or clams have to be fresh!
These babies called my name at the market on Saturday and I am sooooo glad I bought them.
Simple recipe ( I used what I had in the pantry)
1 small red onion
2 teaspoons chopped garlic
olive oil
1 knob butter
1 c white wine
1 bag clams
Rinse clams in cold water. Heat olive oil, add butter. Once butter has melted saute the onion and garlic in olive oil/butter mixture until clear. Turn heat up high, throw in clams, add white wine, put a lid on the pot and shake every minute or so.
Once the clams have all opened, its finished. Serve over pasta or just sop up juices with some good garlic bread.
